SALAD CREAM / MAYONNAISE

Ingredients
2 Cups washed/soaked cashew nuts
1 Cup water (or less if you want thicker and more creamy)
1/2 cup Apple cider vinegar
1/4 Cup Olive oil
1 Tbsp Honey or maple syrup for vegan option
2 Tbsp unsweetened French Dijon mustard
1tsp salt (or no salt if you are off salt)
Optional 1/2 garlic
Optional parsley.
Method
Blend all ingredients in high speed blender until smooth and creamy
PERFECT TO USE ON COLE SLOW, SALADS, OR AS A DIP WITH ADDED HERBS OR GARLIC
